Ingredients

Rice

  • 4 cups cooked rice (preferably day-old)

Eggs

  • 4 eggs, lightly beaten

Vegetables (optional)

  • ½ cup green peas
  • ½ cup carrots, finely diced
  • 2 green onions, chopped

Seasoning

  • 3 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt & white pepper to taste

Instructions

    Scramble eggs

    • Heat 1 tbsp oil in wok or pan.
    • Add eggs and scramble lightly.
    • Remove and set aside.

    Fry rice

    • Add remaining oil to pan.
    • Add rice, breaking up clumps.
    • Stir-fry 3–4 minutes.

    Add vegetables

    • Add peas and carrots.
    • Stir-fry 2 minutes.

    Combine

    • Return eggs to pan.
    • Add soy sauce, sesame oil, salt, and pepper.
    • Toss well over high heat.

    Serve

    • Garnish with green onions and serve hot.

      Small Notes :

        • Day old rice prevents mushiness.
        • High heat gives best texture.
        • Add garlic or ginger for extra flavor.
        • Customize with chicken, shrimp, or vegetables.
