Ingredients

Vegetables

  • 1 medium cauliflower, cut into florets
  • 3 medium potatoes, peeled and cubed

Aromatics

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp grated ginger

Spices

  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • ½ tsp chili powder (adjust to taste)
  • Salt to taste

Finishing

  • 1 tomato, chopped (optional)
  • Fresh coriander leaves
  • Lemon wedges

Instructions

    Parboil vegetables

    • Boil potatoes and cauliflower 5 minutes.
    • Drain and set aside.

    Cook spices

    • Heat oil in pan.
    • Add cumin seeds until they crackle.

    Sauté aromatics

    • Add onion, garlic, and ginger.
    • Cook until golden.

    Add spices

    • Add turmeric, coriander, chili, and salt.
    • Stir briefly.

    Add vegetables

    • Add potatoes and cauliflower.
    • Toss to coat evenly.

    Simmer

    • Cover and cook on low 15–20 minutes, stirring occasionally.
    • Add tomato if using.

    Finish

    • Garnish with coriander and lemon juice.

      Small Notes :

        • Do not overcook cauliflower.
        • Dry style is traditional; add water for curry texture.
        • Mustard oil adds authentic flavor.
        • Great with roti or naan.
