Aloo Gobi
Aloo Gobi is a classic Indian vegetarian dish made with potatoes and cauliflower cooked in warm spices. Simple, comforting, and full of flavor, it’s a staple in home style Indian cooking.
Ingredients
Vegetables
- 1 medium cauliflower, cut into florets
- 3 medium potatoes, peeled and cubed
Aromatics
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp grated ginger
Spices
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp ground coriander
- ½ tsp chili powder (adjust to taste)
- Salt to taste
Finishing
- 1 tomato, chopped (optional)
- Fresh coriander leaves
- Lemon wedges
Instructions
Parboil vegetables
- Boil potatoes and cauliflower 5 minutes.
- Drain and set aside.
Cook spices
- Heat oil in pan.
- Add cumin seeds until they crackle.
Sauté aromatics
- Add onion, garlic, and ginger.
- Cook until golden.
Add spices
- Add turmeric, coriander, chili, and salt.
- Stir briefly.
Add vegetables
- Add potatoes and cauliflower.
- Toss to coat evenly.
Simmer
- Cover and cook on low 15–20 minutes, stirring occasionally.
- Add tomato if using.
Finish
Garnish with coriander and lemon juice.
Small Notes :
- Do not overcook cauliflower.
- Dry style is traditional; add water for curry texture.
- Mustard oil adds authentic flavor.
- Great with roti or naan.
