No matter how many times we've eaten it, Caesar salad rarely tastes the same every time. Why? Because the main challenge is the right balance of ingredients. And we're proud to have mastered it by successfully blending all its rich, deep flavors.

Notes
  • You may have leftover dressing depending on how much dressing you like.  The nutritional table is on the full amount being used
  • Nutritional table does not include the breaded tofu or added protein

Ingredients

Croutons

100 g (2 cups) stale white square bread without the crust, cut into cubes
55 g (1/4 cup) butter

Capers

30 ml (2 tbsp) capers, drained and patted dry
15 ml (1 tbsp) olive oil


Vinaigrette

2 egg yolks
30 ml (2 tbsp) lemon juice
5 ml (1 tsp) chopped anchovy fillets
1 clove of garlic, finely chopped
60 ml (1/4 cup) vegetable oil
60 ml (1/4 cup) olive oil

Salad

360 g (8 cups) romaine lettuce hearts, torn
25 g (1/3 cup) freshly grated Parmesan cheese
30 g (1/4 cup) shaved Parmesan cheese
8 slices cooked bacon, chopped



Preparation

  1. Pour the Florette lettuce into a large salad bowl.
  2. Add the croutons and grated Parmesan.
  3. Pour in the Caesar dressing and mix gently.
  4. Serve immediately and enjoy!
