Ingredients
Croutons
100 g (2 cups) stale white square bread without the crust, cut into cubes
55 g (1/4 cup) butter
Capers
30 ml (2 tbsp) capers, drained and patted dry
15 ml (1 tbsp) olive oil
Vinaigrette
2 egg yolks
30 ml (2 tbsp) lemon juice
5 ml (1 tsp) chopped anchovy fillets
1 clove of garlic, finely chopped
60 ml (1/4 cup) vegetable oil
60 ml (1/4 cup) olive oil
Salad
360 g (8 cups) romaine lettuce hearts, torn
25 g (1/3 cup) freshly grated Parmesan cheese
30 g (1/4 cup) shaved Parmesan cheese
8 slices cooked bacon, chopped
Preparation
- Pour the Florette lettuce into a large salad bowl.
- Add the croutons and grated Parmesan.
- Pour in the Caesar dressing and mix gently.
- Serve immediately and enjoy!
