Cook the pasta
- Bring a large pot of salted water to a boil.
- Cook 400 g pasta until al dente (about 8–10 minutes, depending on type).
- Reserve 1 cup of pasta water, then drain and set aside
Prepare the shrimp
- Pat 500–600 g shrimp dry with paper towels.
- Season lightly with salt, pepper, and 1 ½ tsp paprika.
Sauté the shrimp
- In a large skillet, heat 2 tbsp olive oil + 2 tbsp butter over medium-high heat.

Make the garlic butter sauce

- If needed, add more reserved pasta water until it looks glossy and saucy.
- Return the shrimp to the skillet and toss gently to combine.
Finish & serve
- Sprinkle with chopped fresh parsley and ½ cup grated parmesan (if using).
- Taste and adjust with extra salt, pepper, or chili flakes.
- Serve hot with lemon wedges on the side
