Ingredients

  • Pasta  400 g (about 14 oz)
  • Shrimp 500–600 g (1.1–1.3 lbs), peeled & deveined
  • Butter 5 tbsp
  • Olive oil 2 tbsp
  • Garlic 6–7 cloves, minced
  • Red chili flakes 2–3 tsp (adjust heat level)
  • Paprika 1 ½ tsp (optional)
  • Lemon juice 2 tbsp
  • Fresh parsley 3 tbsp, chopped
  • Parmesan cheese ½ cup, grated (optional)
  • Salt & black pepper to taste

Instructions

      Cook the pasta
      • Bring a large pot of salted water to a boil.
      • Cook 400 g pasta until al dente (about 8–10 minutes, depending on type).
      • Reserve 1 cup of pasta water, then drain and set aside

        Prepare the shrimp

        • Pat 500–600 g shrimp dry with paper towels.
        • Season lightly with salt, pepper, and 1 ½ tsp paprika.

        Sauté the shrimp

        • In a large skillet, heat 2 tbsp olive oil + 2 tbsp butter over medium-high heat.
        • Add shrimp in a single layer. Cook 1–2 minutes per side until pink and opaque.
        • Remove shrimp from the pan and set aside.

        Make the garlic butter sauce

        • In the same skillet, melt the remaining 3 tbsp butter.
        • Add 6–7 cloves minced garlic and 2–3 tsp chili flakes.
        • Sauté for about 30–45 seconds, until fragrant (don’t let the garlic burn).
        • Add 2 tbsp lemon juice and a splash of reserved pasta water (about ¼ cup) to loosen the sauce.

        Combine pasta & shrimp

        • Add the drained pasta to the skillet, tossing to coat with the sauce.
        • If needed, add more reserved pasta water until it looks glossy and saucy.
        • Return the shrimp to the skillet and toss gently to combine.

        Finish & serve

        • Sprinkle with chopped fresh parsley and ½ cup grated parmesan (if using).
        • Taste and adjust with extra salt, pepper, or chili flakes.
        • Serve hot with lemon wedges on the side
