Ezogelin Soup
Ezogelin Soup is a beloved Turkish lentil soup made with red lentils, bulgur, rice, and warming spices. Hearty, comforting, and slightly tangy, it’s traditionally served with lemon.
Ingredients
Legumes & Grains
- ½ cup red lentils
- 2 tbsp bulgur
- 2 tbsp rice
Vegetables
- 1 onion, finely chopped
- 1 tbsp tomato paste
- 1 tbsp red pepper paste
Liquids
6 cups water or vegetable stock
Seasoning
- 2 tbsp olive oil or butter
- 1 tsp dried mint
- 1 tsp paprika
- ½ tsp cumin
- Salt & black pepper to taste
To Serve
- Lemon wedges
Instructions
Sauté base
- Heat oil or butter in a pot.
- Sauté onion until soft.
- Add tomato and pepper paste, cook 2 minutes.
Add legumes
- Add lentils, bulgur, and rice.
- Stir well.
Simmer
- Add water or stock.
- Bring to a boil, then simmer 25–30 minutes until soft.
Season
- Add mint, paprika, cumin, salt, and pepper.
- Simmer 5 minutes more.
Serve
Serve hot with lemon.
Small Notes :
- Texture should be thick but pourable.
- Blend slightly if smoother texture is preferred.
- Dried mint is essential for authentic flavor.
- Lemon enhances the soup.
