Ingredients

Legumes & Grains

  • ½ cup red lentils
  • 2 tbsp bulgur
  • 2 tbsp rice

Vegetables

  • 1 onion, finely chopped
  • 1 tbsp tomato paste
  • 1 tbsp red pepper paste

Liquids

  • 6 cups water or vegetable stock

Seasoning

  • 2 tbsp olive oil or butter
  • 1 tsp dried mint
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt & black pepper to taste

To Serve

  • Lemon wedges

Instructions

    Sauté base

    • Heat oil or butter in a pot.
    • Sauté onion until soft.
    • Add tomato and pepper paste, cook 2 minutes.

    Add legumes

    • Add lentils, bulgur, and rice.
    • Stir well.

    Simmer

    • Add water or stock.
    • Bring to a boil, then simmer 25–30 minutes until soft.

    Season

    • Add mint, paprika, cumin, salt, and pepper.
    • Simmer 5 minutes more.

    Serve

    • Serve hot with lemon.

      Small Notes :

        • Texture should be thick but pourable.
        • Blend slightly if smoother texture is preferred.
        • Dried mint is essential for authentic flavor.
        • Lemon enhances the soup.
