Ali Nazik Kebab
Ali Nazik Kebab is a beloved Turkish dish from Gaziantep, combining smoky roasted eggplant mixed with garlicky yogurt, topped with tender sautéed meat and spiced butter.
Ingredients
Meat
- 800 g lamb or beef mince
- 2 tbsp olive oil
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 1 tsp paprika
- ½ tsp cumin
- Salt & black pepper
Eggplant Yogurt Base
- 4 large eggplants
- 2 cups thick strained yogurt
- 2 cloves garlic, minced
- Salt to taste
Butter Sauce
- 3 tbsp butter
- 1 tsp paprika or Aleppo pepper
To Serve
Pita bread or lavash
Instructions
Roast eggplants
- Roast eggplants over open flame or oven until skins are charred.
- Peel and mash flesh.
- Mix with yogurt, garlic, and salt.
Cook meat
- Heat olive oil in pan.
- Sauté onion and garlic.
- Add minced meat and spices.
- Cook until browned and juicy.
Prepare butter sauce
- Melt butter and stir in paprika.
- Remove from heat.
Assemble
- Spread eggplant yogurt on plate.
- Top with hot meat.
- Drizzle butter sauce.
Serve
Serve immediately with bread.
Small Notes :
- Flame roasted eggplant gives best flavor.
- Yogurt should be thick and not sour.
- Serve meat very hot over cool yogurt.
- Traditionally made with lamb.
