Loubieh bi Zeit
Loubieh bi Zeit is a Lebanese vegan classic made of tender green beans simmered in olive oil with tomatoes, onions, and garlic. Flavorful, comforting, and perfect with rice or flatbread.
Ingredients
- 500 g green beans, trimmed and cut in half
- 2 medium onions, sliced
- 3–4 cloves garlic, minced
- 4 medium tomatoes, grated or finely chopped (or 1 cup tomato sauce)
- ½ cup olive oil
- Salt to taste
- ½ tsp black pepper
- ½ tsp cinnamon (optional but traditional in Lebanon)
- 1 tbsp lemon juice (optional for brightness)
Instructions
Sauté the onions
- Heat the olive oil in a pot over medium heat.
- Add sliced onions and cook until soft and lightly golden.
Add garlic & green beans
- Add minced garlic; sauté for 30 seconds.
- Add the green beans and stir well to coat with oil.
- Cook for 5–7 minutes, stirring occasionally.
Add tomatoes & season
- Add grated tomatoes (or tomato sauce).
- Season with salt, pepper, and cinnamon.
- Mix and bring to a gentle simmer
Slow cook
- Cover and cook on low heat for 25–30 minutes, until beans are soft and the sauce thickens.
- Add a splash of water only if needed.
Finish
- Taste and adjust seasoning.
- Add lemon juice if you prefer a brighter taste.
- Serve warm or at room temperature.
Small Notes :
- The more olive oil, the richer the flavor this dish is meant to be “bi zeit” (in oil).
- Even better the next day as flavors deepen.
- Serve with warm pita, or with Lebanese rice for a full meal.
